Ingredients

1/4 cup butter
1 cup finely chopped onions
1/2 cup chopped green bell pepper
1/4 cup chopped green onions
3 cloves garlic , minced
1 cup evaporated milk
1 package processed cheese , cubed
1/2 teaspoon butter
2 packages cooked and peeled whole crawfish tails
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 teaspoon Cajun seasoning
2 cups vegetable oil for frying
20 brown and serve pistolette rolls

Instructions

1.In a large skillet, melt 1/4 cup butter over medium heat.
2.Add onions, green bell pepper, green onions, and garlic and stir until vegetables wilt.
3.Add evaporated milk and cubed processed cheese, stirring constantly until cheese is melted.
4.Add cooked crawfish tails, salt and pepper. Toss until mixed well and heated through. Add a dash of garlic powder and Cajun seasoning, and stir well.
5.Preheat oil in a deep-fryer to 325 degrees F.
6.Cut off the very tips of each pistolette roll. Using your fingers, gently pull out the soft bread inside each roll. (Don't puncture or tear the outside.)
7.Stuff the crawfish mixture into each roll until full but not overstuffed.
8.Place the rolls into the fryer, turning occasionally, until golden brown.
9.Place on paper towels to cool slightly before serving.
