Ingredients

1 bag fresh cranberries
3/4 cup sugar
2 cups pure pomegranate juice
1 cinnamon stick
2 whole black peppercorns
2 large slice orange peel , white pith removed
3 packets unflavored gelatin
salt
orange zest ( to garnish ) ( optional )

Instructions

1.In a large pot, combine the cranberries, sugar, pomegranate juice, cinnamon stick, black peppercorns, and orange peel. Bring the mixture to a boil.

3.Remove from heat and strain the mixture into a bowl, removing the solid ingredients.
4.Add the unflavored gelatin to the bowl and stir until completely dissolved.
5.Divide the mixture amongst four 8 oz. ramekins.
6.Cover each ramekin with plastic wrap and refrigerate for 4 hours, or until completely set.
7.To serve, run a knife around the edge of each ramekin and invert onto a plate. Garnish with orange zest if desired.
