Ingredients

2 large eggs
1/4 teaspoon salt
1/2 teaspoon Old Bay Seasoning ( add more or less to your liking )
2 cups flour
2 ounces cream cheese ( or sour cream ( but we prefer cream cheese )
water ( teaspoons at a time )
about 1 1/2 cups of leftover homemade mashed potatoes
1 cup crab claw meat
1 teaspoon Old Bay Seasoning
lemon dill seasoning or a citrus seasoning
butter
sauteed onion
Pierogi is a traditional Polish dish of dumplings filled with savory or sweet ingredients like potatoes, meat, cheese, fruits, or veggies. Crab Pierogies are a fusion recipe that combines pierogi with crab meat, potatoes, and seasoning to provide an exciting sea-food taste. This recipe includes leftover mashed potatoes, crab claw meat, Old Bay seasoning, lemon dill seasoning, and sauteed onions that give a punch of flavors to the pierogi. They can be boiled, baked, or fried and served with melted butter, sour cream, or herbs.

Instructions

1.In a medium mixing bowl, whisk together the eggs, salt, Old Bay seasoning, and flour, until the dough comes together.
2.Add in the cream cheese/sour cream to form soft and elastic dough. Knead for about 5 minutes until smooth, then cover the bowl with a damp cloth and let it rest for 30 minutes.
3.In a large mixing bowl, mix together the mashed potatoes with the crab meat, Old Bay seasoning, lemon dill/citrus seasoning, and sauteed onion.
4.Lightly flour a clean surface and roll out the dough to 1/8 inch thickness.
5.Using a circular cookie cutter, cut out rounds of dough.
6.Add a tablespoon of the crab-potato filling to the center of each round.
7.Fold the dough in half, gently pressing the edges together to seal the pierogi. Repeat until all the dough is used up.
8.Bring a large pot of salted water to a boil. Drop the pierogies into the water, stirring gently to prevent sticking.
9.Keep boiling for 2-3 minutes until they float, then transfer to a plate with a slotted spoon.
10.Add some butter to a pan, place the pierogies on it and cook until they turn golden brown.
11.Serve hot with additional sauteed onions on top.
