1 lb crabmeat , real or imitation
1/2 lb asparagus , nice thin spears , divided
2 medium fresh scraped carrots , grated
2 medium fresh tomatoes , seeded and diced
1/4 teaspoon dried dill weed
1 teaspoon salt

lettuce leaf ( iceberg or romaine works well )
100 g pecan halves , divided
kosher salt
cayenne pepper
parmesan cheese , finely grated ( optional )
1/2 cup ricotta cheese
2 -3 tablespoons cucumber-dill salad dressing ( the thick kind , consistency of mayonnaise )
1 teaspoon sesame oil
1/2 lemon , juice of
1/4 teaspoon dried dill weed
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
These Crab-Asparagus Lettuce Rolls are a perfect snack or light lunch that are easy to make and full of flavor. The combination of the sweet crab meat, fresh asparagus, and crunchy pecans is balanced perfectly with the creamy ricotta dressing. Not only are these rolls delicious, but they are also a healthy option that is packed with protein and nutrients.

Instructions

1.In a large bowl, mix together the crabmeat, grated carrots, diced tomatoes, dried dill weed, salt, and cayenne pepper.
2.Cut off the woody ends of the asparagus spears and steam them for 3-4 minutes, until tender.
3.Roughly chop half of the steamed asparagus and add it to the crab mixture, along with 50g of the pecan halves.
4.Season the mixture with kosher salt, cayenne pepper, and finely grated parmesan cheese (if using).
5.On a large lettuce leaf, spread out a generous spoonful of the crab mixture and top with a few of the remaining asparagus spears.
6.In a small bowl, mix together the ricotta cheese, cucumber-dill salad dressing, sesame oil, lemon juice, dried dill weed, cayenne pepper, and salt.
7.Drizzle the dressing over the lettuce and roll up tightly.
8.Repeat with the remaining lettuce leaves and crab mixture.
