Ingredients

8 poblano chiles
2 egg whites
1 package mozzarella cheese , shredded
1 package goat cheese
2 garlic cloves , minced
1 teaspoon ground cumin
1/2 - 1 teaspoon fresh ground black pepper
1/4 - 1/2 teaspoon dried red pepper flakes
1 can lump crabmeat , rinsed and drained
1 cup frozen whole kernel corn , thawed
1/3 cup fresh cilantro , chopped
1 tablespoon fresh lime juice

mango salsa
fresh cilantro ( to garnish )
This dish is inspired by the classic Mexican dish of chiles rellenos, but with a unique twist. Crab and goat cheese are combined to create a savory filling that is stuffed into poblano peppers. Instructions

1.Preheat oven to 350°F.
2.Cut the poblano chiles in half lengthwise and remove the seeds and membranes.
3.In a medium bowl, whisk the egg whites until stiff peaks form. In a separate bowl, mix together the mozzarella cheese, goat cheese, garlic, cumin, black pepper, and red pepper flakes.
4.Fold the whisked egg whites into the cheese mixture along with the crabmeat, corn, cilantro, and lime juice. Mix well.
5.Prepare a baking sheet with cooking spray. Fill each poblano half with the cheese and crabmeat mixture and place them on the baking sheet.
6.Bake for 25-30 minutes or until the cheese is melted and golden brown.
7.Serve hot with mango salsa and garnish with fresh cilantro.
