Ingredients

4 eggs

salt , a little , to taste
1/4 cup no-salt-added ketchup
1/4 cup dry sherry
1 tablespoon white wine vinegar
1/2 tablespoon horseradish
1/2 cup mayonnaise
2 tablespoons olive oil
1/2 cup sweet onion , minced
1/2 cup celery , minced
2 tablespoons parsley , chopped

Instructions

1.In a mixing bowl, whisk together the eggs, flour, baking powder, milk, garlic, scallion, and 1 tablespoon of the Cajun seasoning until smooth.

3.Heat the oil in a large heavy skillet to 350°F.
4.Using a small scooper, drop the batter into the oil, a few at a time, and cook until golden brown, about 2-3 minutes per side.
5.Remove with a slotted spoon and drain on paper towels.
6.In a small bowl, whisk together the remaining 2 tablespoons of the Cajun seasoning, cayenne, lemon, paprika, sugar, salt, ketchup, sherry, vinegar, horseradish, mayonnaise, and olive oil.
7.Add the onion, celery, and parsley to the dressing and mix well.
8.Serve the beignets with the remoulade dressing on the side.
