1 cup couscous
1 lemon

1/4 red onion , finely chopped
chopped fresh coriander
8 sun-dried tomatoes , thinly sliced

Instructions

1.Put the couscous in a large bowl and add 1 cup boiling water, stir, then leave to stand for at least 15 minutes until the water is absorbed and the couscous is fluffy.
