9 ounces couscous
1 1/4 cups vegetable stock
2 tablespoons olive oil
7 ounces sliced chorizo sausage
1 onion , sliced
1 teaspoon paprika
1 can chickpeas , drained
1 3/4 cups chicken stock
chopped parsley , to serve

Instructions

1.Put the couscous into a large heatproof bowl and pour over the vegetable stock. Give it a stir, then cover with clingfilm and set aside for 5-10 mins until the couscous has absorbed all the stock.
2.Heat the oil in a large frying pan and add the sliced chorizo sausage. Fry for a few mins until crisp and browned, then scoop out of the pan using a slotted spoon and set aside.
3.In the same pan, fry the sliced onion for 10 mins until soft and golden. Add the paprika and fry for a further 1-2 mins until fragrant.
4.Add the chickpeas and chicken stock to the pan and bring to the boil. Reduce the heat and simmer for 10-15 mins until the liquid has reduced by half and the sauce has thickened slightly.
5.Fluff up the couscous with a fork and add to the pan with the chorizo. Stir everything together and heat through for a minute or two until piping hot. Serve immediately, sprinkled with chopped parsley.
