4 medium zucchini
1 small onion , finely chopped
1 garlic clove , minced
2 teaspoons olive oil
1 cup cooked whole wheat couscous
1 cup crushed tomatoes

Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.Cut each zucchini in half lengthwise. Using a spoon, scoop out the inside of each zucchini half and place it in a large bowl. Reserve the hollowed-out zucchini halves.
3.In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent, around 5 minutes.
4.Add the cooked couscous and crushed tomatoes to the skillet and stir to combine. Continue cooking over medium heat for another 5 minutes.
5.Add the basil, parsley, salt or salt substitute, and black pepper to the skillet and stir until well combined.
6.Spoon the couscous mixture into each of the reserved zucchini halves and place them in a 9x13 inch baking dish.
7.Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the zucchini is tender.
