Ingredients

3 tablespoons olive oil
1 medium onion , finely chopped
1 red bell pepper , finely diced
3 cloves garlic , minced
1 can tomato sauce
1/2 cup chopped fresh cilantro
4 teaspoons ground cumin
4 teaspoons sweet Hungarian paprika
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 teaspoons sugar
1 can beef broth , divided
3/4 cup couscous
1 lb ground lamb
1 lb ground sirloin
2 eggs , beaten
1 beef bouillon cube , crushed
3 medium tomatoes , peeled , seeded , and coarsely chopped

Instructions

1.Heat the olive oil in a large skillet over medium heat.
2.Add the onion, red pepper, and garlic and sauté for 5 minutes, or until the vegetables are softened.
3.Stir in the tomato sauce, cilantro, cumin, paprika, salt, pepper, sugar, and 1/4 cup of the beef broth.
4.Simmer over low heat for 10 minutes.

8.Preheat the oven to 375 degrees F.
9.In a large bowl, mix together the ground lamb, ground sirloin, eggs, crushed bouillon cube, chopped tomatoes, and couscous mixture.
10.Make sure everything is well blended.
11.Press the mixture into a greased 9x5x3-inch loaf pan.
12.Cover with foil and bake for 45 minutes.
13.Uncover and bake for an additional 30 minutes, or until the internal temperature reaches 160 degrees F.
14.Remove from the oven and let rest for 5 minutes before serving.
