Ingredients

8 -10 inches celery , finely chopped
1 small white onion , finely chopped
5 -6 mushrooms , finely chopped
2 garlic cloves , minced
1 cup couscous
1 teaspoon ground coriander
1 teaspoon ground rosemary
1 teaspoon ground paprika
1 teaspoon ground turmeric
1 teaspoon ground cinnamon
1 teaspoon ground chili powder ( optional )
1 cup chicken stock
Couscous is a traditional dish from North Africa made from small steamed balls of semolina. Often compared to rice or pasta, couscous is a delicious and versatile grain used in many recipes. Instructions

1.In a large pot, heat a tablespoon of oil over medium heat.

4.Pour chicken stock and stir well.
5.Bring the liquid to a boil and remove from the heat. Cover and let sit for 10 minutes to absorb the liquid.
6.After 10 minutes, fluff the couscous with a fork and serve.
