Instructions

1.In a large pot, boil potatoes, celery and onion with bay leaves, thyme, butter and water until the potatoes are tender.
2.In another pot, melt the remaining butter, mix in flour and gradually add half and half whisking constantly until mixture thickens.
3.Add the pot with the cooked vegetables and crawfish tails to the mixture.
4.Season with Cajun seasoning, salt and pepper.
5.Simmer for about 10 minutes or until the flavors combine.
