Beef jerky is a staple food for hunters and campers, as it is a lightweight, high-protein snack that can be enjoyed on the go. The recipe by Alton Brown involves marinating flank steak in a flavorful mixture of Worcestershire sauce, soy sauce, honey, and spices. The steak is then dried out using a box fan and air conditioning filters to create a chewy and delicious snack that can be eaten anytime, anywhere. While store-bought beef jerky can be high in sodium and preservatives, this homemade option allows you to control the ingredients and create a healthier snack.

Instructions

.Place the steaks in a resealable plastic bag.
.Mix the Worcestershire sauce, soy sauce, honey, onion powder, liquid smoke, and red pepper flakes together in a small bowl.
.Pour the marinade over the steaks and seal the bag.
.Place the bag in a baking dish and refrigerate for 6 to 8 hours, flipping the bag occasionally.
.Remove the steaks from the marinade and blot them dry with paper towels.
.Sprinkle black pepper and onion powder on both sides.
.Lay the steaks out on air conditioning filters and place them in a large box fan.
.Prop the fan up at an angle and turn it on to high.
.Allow the jerky to dry for about 12 hours or until it is dry but still chewy.
.Store the jerky in an airtight container.
