680 g courgettes
1 bunch spring onion , bulbs
2 tablespoons fresh dill , chopped
2 tablespoons flat leaf parsley , chopped
3 eggs , beaten
1 teaspoon paprika
225 g feta cheese
175 g plain flour
peanut oil , for frying
lemon slice , to serve
salt and pepper

Instructions

1.Grate the courgettes and squeeze to remove the water. Place in a large bowl.
2.Finely chop the spring onions and add to the bowl, along with the chopped dill and parsley.
3.Beat the eggs together in a separate bowl, then add to the courgette mixture.
4.crumble the Feta cheese in the bowl, then sift the flour and paprika over the top and mix well.
5.Heat the oil in a large frying pan over medium-high heat. Carefully drop heaping tablespoons of the mixture into the hot oil and flatten with the back of the spoon.
6.Fry until golden-brown (about 3 minutes each side) then remove from the pan and place on a kitchen paper towel to drain excess oil.
7.Serve hot with a lemon slice.
