8 medium courgettes
1 white onion , finely diced
4 garlic cloves , finely chopped
100 g halloumi cheese
1 cup breadcrumbs
1 beaten egg
2 tablespoons chopped mint

1 lemon , zest of , grated finely
3 tablespoons salt

4 tablespoons plain flour
4 tablespoons vegetable oil

Instructions

1.Begin by washing and grating the courgettes, then sprinkle salt on them and let them rest for 30 minutes to draw out the moisture.

3.Add the diced onion, chopped garlic, grated halloumi cheese, breadcrumbs, beaten egg, chopped mint, parsley, thyme, grated lemon zest, and ground pepper to the bowl. Mix well until everything is fully combined.
4.Take a small handful of the mixture and shape it into a ball. Coat each ball with plain flour and set it aside.
5.Preheat the vegetable oil in a pan over medium heat.
