Ingredients

8 -10 ounces chopped cooked ham ( see note in the directions for different types of gammon or ham for this recipe )
2 pre-cooked cured smoked sausage , chopped into cubes
1 large onion , peeled and diced
2 large carrots , peeled and finely diced
4 ounces split peas , or
4 ounces split lentils
2 sprigs fresh parsley , finely chopped
2 pints ham or 2 pints vegetable stock
salt and pepper
This Country Style Smoked Sausage, Ham and Split Pea Soup is a hearty and comforting dish, perfect for colder months. Split peas or lentils are cooked with smoked sausage and ham to create a soup that is rich and flavourful. This soup is ideal for meal prep, as it can be made in large batches and frozen for later use.

Instructions

1.In a large pot, sauté the onion and carrots until soft.
2.Add the ham, smoked sausage, split peas or lentils, stock, parsley, salt, and pepper.
3.Bring the mixture to a boil and then reduce the heat.
4.Cover and simmer for 2-3 hours, stirring occasionally.
5.Once cooked, allow to cool for a few minutes and then blend to desired consistency with an immersion blender.
6.Serve hot with crusty bread.
