Country Chicken Piccata is a classic Italian dish that has been adapted to suit American tastes. Essentially, it is a breaded chicken cutlet that is pan-fried and then served with a lemon butter sauce. This version of the dish is a bit simpler than the traditional Italian version, which may use capers in the sauce or a different type of flour for the coating. While it may not be a health food, it is a great way to get some protein and enjoy a delicious and hearty meal.

Instructions

1.Beat the eggs and 2 tablespoons of lemon juice together in a shallow dish.
2.In another shallow dish, combine the flour, garlic powder, and paprika.
3.Dip each chicken breast into the egg mixture, then coat in the flour mixture.
4.Melt butter in a large skillet over medium heat. Add the chicken and cook until browned on both sides and cooked through.
5.Remove chicken from skillet and place on serving platter.
6.Dissolve bouillon cubes in boiling water, add lemon juice to skillet, stir in the broth. Cook and stir until thickened, then pour over the chicken.
