Country Bread, also known as Pain De Campagne, is a traditional French bread that originated in the countryside. It's a rustic, crusty loaf made with rye flour, which gives the bread a distinct flavor. This bread is perfect for individuals who love hearty loaves with a nice crumb. Instructions

1.In a small bowl, mix warm water and honey until the honey dissolves. Add in 2 1/4 teaspoons of yeast and let sit for about 10 minutes.
2.In a separate large bowl, mix rye flour, 1 cup of bread flour, and 1 tablespoon of bread flour. Add in the yeast mixture and 2 3/4 cups of warm water and mix well.
3.Cover the bowl with a kitchen towel and let sit in a warm place for about 2 hours until it doubles in size.
4.In another bowl, mix 2 1/4 teaspoons of yeast, 6 cups of bread flour, and 3/4 cup of rye flour. Slowly add the dry mixture into the wet mixture, stirring until well combined.
5.Knead the dough on a floured surface for about 10 minutes and place it in a greased bowl, covered with a towel, in a warm place for about an hour.
6.Preheat the oven to 425°F (218°C) and place a baking stone inside. Shape the dough into a ball and place it onto a floured peel. Using a sharp knife, make a few slashes on the bread. Slide the bread onto the baking stone and bake for about 30 minutes until golden brown. Cool before slicing.
