Ingredients

2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening
1/2 cup ice water
3/4 cup long grain rice
1 1/2 cups water
1/3 cup butter
1 1/2 cups finely chopped onions
1 cup finely chopped mushroom
1 1/2 lbs salmon fillets
5 eggs , hard cooked
salt and pepper
1 cup finely chopped fresh dill
1 egg
1 teaspoon milk
diced red pepper
2 tablespoons finely chopped dill or 2 tablespoons parsley
1/2 cup butter
2 tablespoons dry white wine
1 tablespoon lemon juice
Coulibiac is a traditional Russian dish that is perfect for special occasions. The salmon and rice filling is flavoured with dill and mushroom, then wrapped in a buttery pastry crust. The dish is usually served with a creamy sauce and garnished with bright red pepper and dill.

Instructions

1.Preheat oven to 425°F.
2.In a large bowl, combine flour, salt and shortening. Cut in until crumbly. Gradually add ice water until a ball is formed. Cover and refrigerate.
3.Rinse rice by stirring in water until it becomes cloudy and draining; repeat until water is clear. In a large saucepan, bring 1-1/2 cups water to a boil. Add rice; stir once. Cover and simmer for 18-20 minutes or until rice is cooked.
4.In a large skillet, melt butter over medium heat. Add onions and mushrooms; cook until onions are tender.
5.Cut salmon into 1/2-in. slices; season with salt and pepper.
6.Roll out pastry into a 16-in. square. Cut into 4 8-in. squares.
7.Place 1/4 of the rice in the centre of each square. Place 1/4 of the mushroom mixture on top of each rice mound. Top each with 1/2 lb. of salmon slices and 1 sliced egg. Sprinkle with dill.
8.Bring corner ends over top of salmon; pinch edges together to seal.
9.Beat egg with milk; brush over pastry.
10.Bake for 22-25 minutes or until pastry is golden brown.
11.While the coulibiac is baking, melt butter in a saucepan. Add red pepper and chopped dill; sauté for 2 minutes. Add white wine and lemon juice; simmer for an additional 2 minutes. Serve over coulibiac.
