2 medium onions , sliced
2 medium tomatoes , chopped
1/4 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon red chili powder
1/2 teaspoon saffron
1/2 teaspoon yellow food coloring
1/2 cup warm milk
1/2 cup fresh coriander leaves , chopped
1/2 cup crisp fried onions
2 green chilies
1/2 cup crisp fried onions
1 tablespoon garlic paste
1 tablespoon ginger paste
1/2 teaspoon black peppercorns
4 cloves
1 inch cinnamon
1 teaspoon cumin seed

Instructions

1.Rinse the basmati rice in cold running water and soak for 30 minutes. Drain the water and keep it aside.
2.Heat oil in a large pan and add sliced onions. Fry until golden brown.
3.Now, add ginger paste, garlic paste, and mixed vegetables. Fry for 2-3 minutes.
4.Add chopped tomatoes, turmeric powder, cumin powder, coriander powder, red chili powder, black peppercorns, cloves, cinnamon, cumin seeds, and saffron. Stir well.
5.Add cottage cheese (paneer), coriander leaves, crisp fried onions, and green chilies. Mix well.
6.Add drained rice and stir well.
7.Now, add food coloring and warm milk. Stir gently.
8.Cover the pan with a tight-fitting lid and reduce the heat to low.
9.Cook on low heat for 20-25 minutes until the rice is cooked well.
10.Serve hot with raita or plain yogurt.
