Ingredients

9 ounces cottage cheese
8 ounces Baby Spinach
1 1/2 - 2 tablespoons butter
1 teaspoon cumin seed
2 onions
2 green chili peppers
1 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1 tablespoon coriander powder
2 tomatoes
1 cup water ( use the water in which spinach was blanched )
1 tablespoon salt
1/2 teaspoon garam masala powder ( of 2 cloves , 1 cardamom and 1 cinnamon stick )
1 tablespoon heavy cream

Instructions

1.Blanch spinach leaves in hot water for 2-3 minutes and then add them to cold water. Drain the water and blend the spinach to make a smooth puree.
2.Heat butter in a frying pan and add cumin seeds. Sauté until they start crackling.
3.Add onions, green chili peppers, and ginger-garlic paste and sauté until the onions become translucent. Add the red chili powder and coriander powder and sauté for another minute.
4.Add finely chopped tomatoes and cook until they soften. Add the spinach puree and cook it for 5-7 minutes.
5.Add 1 cup of water, salt, and the garam masala powder. Cook it for another 5-7 minutes.
6.Add the cubed cottage cheese and mix it well with the spinach gravy. Add the heavy cream and let everything cook for another 5 minutes. Garnish with cilantro before serving.
