Ingredients

1 pound dried cranberry beans
1 tablespoon olive oil
1 onion , chopped
4 cups chicken broth
water as needed
1 teaspoon Italian seasoning
1 bay leaf
1/2 teaspoon red pepper flakes , or to taste
1 sprig fresh rosemary
1 sprig fresh thyme
1 pound Cotechino sausage
1 bunch Swiss chard , trimmed and chopped
1 tablespoon olive oil
salt and ground black pepper to taste
Cotechino and Braised Beans is a traditional Italian dish, often served during the winter months. This hearty meal will warm you up on a cold evening, while the combination of beans, sausage, and Swiss chard make for a filling and nutritious dinner. Instructions

1.Rinse the beans and soak them overnight in water.
2.In a deep pot, heat the olive oil over medium heat. Add the onion and sauté until soft, about 5 minutes.
3.Drain the beans and add them to the pot with the onion. Add enough water to cover the beans.
4.Add the chicken broth, Italian seasoning, bay leaf, red pepper flakes, rosemary, and thyme to the pot.
5.Bring the mixture to a simmer and cook for 1-2 hours, or until the beans are tender.
6.Add the Cotechino sausage to the pot and cook for 30 minutes, or until the sausage is cooked through.
7.In a separate frying pan, heat the additional olive oil over medium-high heat. Add the Swiss chard and sauté until wilted, about 5-7 minutes.
8.Serve the Cotechino and Braised Beans with the Swiss chard on top, seasoned with salt and pepper to taste.
