Ingredients

1 bottle dry red wine
3 cups hot chicken stock
1/2 cup dried porcini mushrooms
6 lbs short rib of beef , cut into 5 to 6 oz . pieces
salt and black pepper
1/4 cup vegetable oil
3 cups chopped onions
1/4 cup minced bacon or 1/4 cup pancetta
1 1/2 cups grated carrots
2 sprigs fresh rosemary ( I used about 1 tbsp . dried )
4 bay leaves
6 whole cloves
1/3 cup tomato paste
2 cups crushed Italian plum tomatoes , and their liquid

Instructions

1.Preheat the oven to 350°F/175°C.
2.In a large pot, bring the red wine, chicken stock, and dried mushrooms to a boil. Reduce the heat and let simmer for 10 minutes.
3.Season the beef ribs generously with salt and black pepper. In a separate Dutch oven or oven-safe pot, heat the vegetable oil over medium-high heat. Brown the beef ribs on all sides until well seared. Remove the ribs from the pot and set aside.
4.In the same pot, add the chopped onions, minced bacon or pancetta, and grated carrots. Sauté until the vegetables are soft and fragrant, about 8 minutes.
5.Add the rosemary, bay leaves, cloves, and tomato paste to the pot. Stir well to combine. Add the crushed tomatoes and their liquid and stir again.
6.Add the seared beef ribs back to the pot and pour the red wine and chicken stock mixture over the top. Cover the pot with a tight-fitting lid and transfer to the oven.
7.Bake for 3 to 4 hours, or until the beef ribs are fork-tender and falling off the bone.
8.Serve the costolettine di manzo brasate hot with the remaining sauce and your favorite sides.
