6 cups hot water

1 recipe slow cooked black beans , above

Instructions

1.Rinse black beans and discard any small stones or debris. Add beans and garlic to a large pot with 6 cups of hot water and 2 tsp of salt. Bring to a boil over high heat, reduce heat and simmer. Stir occasionally and add hot water as needed.
2.In a separate skillet, heat olive oil over medium-high heat. Add onion, carrots, bell pepper, sea salt, black pepper, garlic powder, and onion powder. Cook stirring occasionally until the vegetables are golden brown.
3.Add 1/3 cup of hot water to deglaze the skillet. Scrape the bottom of the skillet to loosen all the browned bits of vegetables.
4.Add the vegetable mixture to the simmering black beans. Continue to simmer until the black beans are soft and tender. Once the soup is cooked, poach the eggs in gently simmering water for about 3-4 minutes each.
5.To serve, ladle the soup into bowls and add a poached egg to each bowl.
