3 3 cups monterey jack cheese or 3 cups mozzarella cheese

Instructions

1.Preheat your oven to 350°F and prepare an ovenproof dish.
2.Cut the tortillas into small triangles, and fry them i oil until crispy.
3.In a saucepan, heat the tomato and garlic, and add in the jalapeno peppers to the mix.
4.Layer the tortilla chips in the dish, topped with the shredded meat, tomato sauce, beaten eggs, and cheese.
5.Bake the dish covered in foil for 25 minutes, and then bake uncovered for an additional 10 minutes until the dish is warm and bubbly.
