Ingredients

1 1/2 grated coconuts or 1 cup grated unsweetened coconut
2 cups water
3 tablespoons yeast
3/4 cup warm water
2 tablespoons melted butter
3 1/2 tablespoons sugar
3 teaspoons salt
3 lbs flour ( approximately )

Costa Maya Coconut Bread is a traditional Belizean bread that is uniquely made with grated coconut and has tropical flavors. Instructions

1.Place grated coconuts in a blender or a food processor with 2 cups of water and blend until smooth.
2.Transfer the resulting liquid in a pot and bring it to a boil.
3.Dissolve 3 tablespoons of yeast in ¾ cups of warm water in a small bowl and let it rest for 5 minutes.
4.In a separate large bowl combine the coconut mixture, melted butter, 3 ½ tablespoons of sugar, 3 teaspoons of salt, and ¾ prepared yeast.
5.Slowly add 3lbs flour while mixing the ingredients using an electric mixer on medium speed until the dough is stiff.
6.Knead the dough for 2-3 minutes until it’s smooth and elastic.
7.Place the dough in a greased bowl and cover it for 90 minutes to rise in a warm place.
8.After the dough rises, punch it down, cut it into manageable pieces, and shape into a loaf or patty.
9.Place loaves or patties on a greased baking sheet and let them rise again uncovered for 15-20 minutes.
10.Preheat oven to 350°F and bake loaves or patties for 20-25 minutes or until golden brown.
