Ingredients

1 1/2 cups plain flour
4 teaspoons baking powder
1/2 teaspoon salt
2/3 - 2/3 cup coarse yellow cornmeal
2/3 - 2/3 cup slivered almonds
1/2 cup butter , diced
1 cup sugar
2 eggs , lightly beaten
1 cup full flavoured white wine or 1 cup apple juice
Cornmeal and Chardonnay Cake is a classic cake recipe that originated in Italy. This cake is a delightful fusion of cornmeal, slivered almonds, and white wine, making it light and flavorful. Instructions

1.Preheat oven to 175°C (160°C for fan ovens).
2.Grease and flour a 20 cm cake tin.
3.Sift together the flour, baking powder and salt into a bowl.
4.Stir in the cornmeal and almonds.
5.In a separate bowl, cream the butter and sugar together until fluffy.
6.Add the eggs one at a time, beating well.
7.Add the flour mixture and wine alternatively (1/3 of each at a time) to the butter and sugar mixture, beating well after each addition.
8.Pour the batter into the prepared cake tin and smooth it out.
9.Bake for 30-35 minutes, or until a skewer inserted into the center of the cake comes out clean.
10.Once cooked, leave the cake to cool for 10 minutes, and then turn it onto a wire rack to cool completely.
