100 g butter , chopped
1/2 cup brown sugar

The Cornflake Loaf is a delightful breakfast treat that is easy to make and incredibly tasty. Instructions

1.Preheat oven to 180C (160C fan forced).
2.Grease a 10 x 20cm (base measurement) loaf pan and line with baking paper, allowing overhang on long sides.
3.Combine butter, sugar and maple syrup in a small saucepan over low heat. Cook, stirring, for 3-4 minutes or until butter has melted and sugar has dissolved. Remove from heat. Stir in cornflakes and peanuts.
4.Prepare cake mix according to packet instructions, using butter and brown sugar (instead of sugar), and adding eggs and cinnamon. Stir in buttermilk and half the cornflake mixture.
5.Pour cake mixture into prepared pan. Smooth surface. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean. Drizzle remaining maple syrup over the top. Sprinkle with remaining cornflake mixture. Leave to cool slightly before slicing and serving.
