3/4 cup cornmeal , plus
3 tablespoons plain cornmeal
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup milk
1 egg

Instructions

1.Preheat oven to 375°F.
2.In a skillet, cook the beef over medium heat until browned and cooked through. Add frozen corn, enchilada sauce, optional sour cream, garlic powder, salt and pepper to the skillet and mix well.
3.In another bowl, combine cornmeal, baking powder, baking soda, salt, milk, and egg, stirring until well combined.
4.Spread the beef-corn mixture evenly into the bottom of a lightly greased 8-inch square baking dish. Then pour the cornmeal mixture over the beef-corn mixture and spread evenly.
5.Sprinkle shredded cheese on top of the Cornchilada Bake casserole.
6.Cover the baking dish with aluminum foil and bake for 25 minutes. Then uncover and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
7.Serve warm and enjoy!
