310 g corn kernels ( drained and rinsed )
2 tablespoons mint leaves ( fresh , chopped )
3 green onions ( scallions , thinly sliced )
olive oil flavored cooking spray

Instructions

1.In a large bowl, add chickpeas, milk and eggs. Mix well to combine.
2.Sift self-raising flour over the mixture and stir until combined.
3.Add zucchini, corn, mint and green onions. Mix well.
4.Heat a non-stick frying pan over medium heat. Spray with olive oil cooking spray.
5.Using a 1/4-cup measuring cup, spoon mixture into pan and flatten slightly.
6.Cook for 3-4 minutes on each side or until golden. Repeat with remaining mixture.
