Ingredients

6 tablespoons butter , softened , and divided
1 cup chopped onion
2 garlic cloves , minced
1 cup fresh corn kernels ( about 2 ears )
2 teaspoons minced jalapenos
1 teaspoon salt , divided
1 cup flour
1 cup yellow cornmeal
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon chili powder
1 1/4 cups buttermilk ( fat free is fine )
2 large eggs
1 large egg white
1 tablespoon fresh lime juice
1 tablespoon honey
Corn muffins are a classic American snack, often served with butter or jam. This recipe takes a savory turn with the addition of jalapenos and chili powder. The lime butter adds an extra layer of flavor that perfectly complements the spiciness of the muffins. These muffins are perfect for breakfast or brunch and are sure to impress any guests. Instructions

1.Preheat the oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
2.Heat 2 tablespoons of butter in a large skillet over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
3.Add the corn kernels and jalapenos to the pan. Sprinkle with 1/2 teaspoon of salt and cook for another 3-4 minutes until the corn is tender.
4.In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, chili powder, and remaining salt.
5.Melt the remaining butter in a small saucepan. Whisk in the buttermilk, eggs, egg white, lime juice, and honey until fully combined.
6.Add the wet ingredients to the dry ingredients, and stir until just combined. Don't overmix.
7.Fold in the corn mixture.
8.Spoon the batter into the muffin tin and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
9.Let the muffins cool for a few minutes before serving with the lime butter.
10.To make the lime butter, combine the softened butter and lime zest in a small bowl. Serve with the warm muffins.
