Ingredients

2 cups corn kernels ( defrosted if frozen )
1 cup half-and-half
1/2 cup feta cheese , crumbled
3 eggs
2 egg yolks
1/2 - 1 teaspoon kosher salt
1 pinch white pepper
1 lb large shrimp , peeled , deveined , tails left on
2 tablespoons all-purpose flour
2 teaspoons paprika
2 teaspoons brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 cup dry white wine
1/2 cup chicken broth
2 tablespoons unsalted butter
fresh chives , chopped
Corn flan with spicy shrimp is a twist on the classic flan dessert. The corn flan is a creamy, custard-like dish made with sweet corn, eggs, and feta cheese. The spicy shrimp is sauteed in a mixture of spices and served as a topping for the corn flan. Instructions

1.Preheat oven to 300 degrees F (150 degrees C).
2.In a blender, combine corn, half-and-half, feta cheese, eggs, yolks, salt and white pepper.
3.Grease ten 1/2-cup ramekins or custard cups. Divide corn mixture among the ramekins. Place ramekins in a baking dish. Pour enough hot water into the dish to come halfway up the sides of the ramekins.
4.Bake for 35 to 40 minutes, or until set. Remove cups from the baking dish and let cool. Refrigerate until cold.
5.In a small bowl, mix together flour, paprika, brown sugar, salt, cumin, and cayenne. Heat olive oil and butter in a large skillet. When foam subsides, toss shrimp in the flour mixture to coat lightly, then tap off excess and saute in the hot oil until pink and curled. Remove shrimp and set aside.
6.Add wine and broth to skillet and simmer until reduced to about 1/3 cup.
7.Swirl in butter. Taste and add salt if needed.
8.Run a knife around the edge of each ramekin. Unmold flan onto serving plates.
9.Spoon shrimp and sauce over each flan. Garnish with chives and serve.
