Ingredients

1/3 cup light sour cream

1 ear shucked corn ( about 1 to 1 1/2 cups )
1/3 cup flour
2 tablespoons yellow cornmeal ( fine ground )
1/2 cup milk
1 large egg yolk
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large egg white
cooking spray
4 ounces smoked salmon , cut into 24 strips
chopped fresh chives ( optional )

Instructions

1.In a small bowl, mix the sour cream and chives together. Set aside.

3.Make a well in the center of the mixture and add the milk, egg yolk, salt, and pepper. Whisk mixture until almost smooth.
4.In a separate bowl, beat egg white until stiff. Fold into the cornmeal mixture.
5.Place a large skillet over medium heat and spray with cooking spray. Use a tablespoon to drop 2 or 3 tablespoons of the mixture to form each blini. Cook for 1-2 minutes, then flip and cook for another minute or until golden brown.
