Ingredients

3 -4 lbs corned beef ( I like the flat cut )
1 cup water
1 bottle Guinness stout ( NOT Draught )
6 -8 small golden potatoes
5 -7 small carrots
2 -3 small onions
1/2 small cabbage , cut into two wedges ( keep the core in to help stay together while cooking )
Corned beef is a classic Irish-American dish that is often enjoyed on St. Patrick's Day. This recipe takes that traditional dish and gives it a deliciously modern twist. The oven-roasting technique produces a tender, juicy beef that is surrounded by a flavorful blend of vegetables, making it a satisfying and impressive main course. While corned beef is not the healthiest protein option, it can be enjoyed in moderation as part of a well-balanced diet. This dish is perfect for sharing with family and friends.

Instructions

1.Preheat the oven to 300°F.
2.Place the corned beef in a large Dutch oven or roasting pan.
3.Pour the water and Guinness over the corned beef.
4.Cut the potatoes, carrots, and onions into bite-sized pieces and add them to the pan.
5.Arrange the cabbage wedges around the beef.
6.Cover the pan tightly with foil or a lid.
7.Roast the beef for 2 to 3 hours or until it reaches an internal temperature of 145°F.
8.Allow the beef to rest for 10 to 15 minutes before slicing it against the grain.
9.Spoon the vegetables and broth over the beef slices and serve.
