Ingredients

1 bunch cilantro
4 green chilies , small size or 2 jalapeno chiles
1/2 cup red chile , dried and crushed
1 cup yogurt or 1 large tomatoes
5 garlic cloves
1 teaspoon salt
1/2 cup water
Coriander Chili Sauce, also known as Sonam Penzom Sibeh, is a popular condiment in Tibet. This sauce is made by blending fresh cilantro, fiery green chilies, and a combination of dried red chilies and garlic. This sauce adds depth of flavor and a little kick to every meal. This sauce is a popular marinade for chicken or beef or can be used as a flavorful dip for spring rolls, chicken satay or grilled tofu. You can also add it to noodles or spread it over a sandwich or wrap. This sauce is a simple and easy way to add more flavor to your meals.

Instructions

1.Rinse the cilantro and chilies thoroughly under cold water. Remove the cilantro leaves and trim the stems.
2.Remove the stems of the chilies but leaving the seeds, roughly chop the jalapeno chiles.
3.If using dried chilies, soak them in water for 10 minutes until they're soft and pliable. Discard the seeds and stem then roughly chop the chili.
4.Peel and dice the garlic cloves.
5.In a food processor or blender, blend the cilantro, chilies, garlic, yogurt or tomatoes, red chile flakes, salt with water until smooth.
6.Transfer the sauce to a bowl or glass jar. Cover and refrigerate for later use. The sauce will keep for up to 1 week in the refrigerator.

This sauce is healthy and flavorful at the same time.
It is also very versatile and can be used as a dip, condiment or marinade.

CONS

If you are not a big fan of spicy food, you may want to reduce the amount of chilies in the recipe.
The use of dried chilies can be a potential allergy trigger for some people.
Also, depending on where you buy coriander leaves, it can be slightly expensive in some regions.
