Ingredients

1/2 pound bacon , chopped
6 chicken thighs , or more to taste
2 shallots , chopped
2 teaspoons dried thyme
1 teaspoon dried rosemary
1 teaspoon minced garlic , or more to taste
2 cups dry white wine
1 cup sliced mushrooms , or to taste ( optional )
1 cup chicken stock , or more as needed
salt and ground black pepper to taste
1 tablespoon butter
1 tablespoon all-purpose flour

Instructions

1.In a large Dutch oven or pot, cook the bacon over medium heat until browned and crispy.

10.If using mushrooms, add them to the pot about 15 minutes before the end of the cooking time.
11.In a small bowl, whisk together the butter and flour to form a paste.
12.Once the chicken is cooked, remove it from the pot and set aside.
13.Whisk the butter and flour paste into the cooking liquid to thicken it.
14.Simmer until the sauce has thickened, then return the chicken to the pot.
15.Serve hot with crusty bread or over a bed of creamy mashed potatoes.
