Ingredients

1 lb red potatoes , quartered
3 carrots , sliced into 1/2 inch pieces
1 1/2 cups dry red wine
1 cup chicken broth
1 bay leaf
1 teaspoon thyme
1 teaspoon herbes de provence
salt and pepper

Instructions

1.Preheat the oven to 375°F.

8.Add the wine, broth, bay leaf, thyme, and herbes de Provence to the pot.

10.Remove the bay leaf, season with salt and pepper as needed, and serve hot.
