Ingredients

1 chicken , cut-up into pieces ( or rooster )
1 1/2 cups approximately 1/2 bottle of full-body red Burgundy wine ( we used Lemberger )
6 bacon , slices diced
1/2 lb baby portobella mushroom
12 white pearl onions ( we used canned )
2 -3 garlic cloves , mashed
2 carrots , peeled and quartered
olive oil
3 sprigs fresh thyme
1 bay leaf
fresh parsley
salt and pepper
Coq Au Vin is a classic French dish that translates to 'rooster in wine'. Originally, the dish was made with rooster, but today chicken is more commonly used. The recipe involves marinating the chicken in red wine and aromatics, then slowly cooking it with bacon, mushrooms, onions, and carrots. Instructions

1.Preheat oven to 350°F (180°C).
2.In a large dutch oven, heat the olive oil over medium heat.
3.Add the bacon and cook until crispy, then remove from the pan and set aside.
4.Season the chicken pieces with salt and pepper, then add them to the pan and cook until browned on all sides.
5.Remove the chicken from the pan and set aside.
6.Add the mushrooms and pearl onions to the pan and sauté until lightly browned.
7.Add the garlic and cook for 1-2 minutes, until fragrant.
8.Pour in the red wine and scrape up any browned bits from the bottom of the pan.
9.Add the chicken back to the pan, along with the bacon, carrots, thyme, and bay leaf.
10.Bring the mixture to a simmer, then cover and transfer to the oven.
11.Bake for 1½ - 2 hours, until the chicken is tender and the sauce has thickened.
12.Remove from oven, garnish with parsley, and serve.
