Ingredients

6 slices smoked bacon , diced
1 tablespoon olive oil or 1 tablespoon vegetable oil
2 lbs boneless skinless chicken thighs , cut into bite-size pieces
2 lbs boneless skinless chicken breasts , cut into bite-size pieces
salt and pepper
1 large carrot , peeled and grated
2 stalks celery , sliced
1 bag white pearl onion , thawed
2 garlic cloves , peeled and minced
8 ounces button mushrooms , cleaned and sliced
1/2 teaspoon dried thyme
2 teaspoons dried parsley
2 cups dry red wine , such as Burgundy
1/4 cup cognac
2 tablespoons cornstarch
3 tablespoons cold water
salt & freshly ground black pepper , to taste

Instructions

1.Turn the Instant Pot on 'Sauté'. Add the olive oil and bacon. Cook for 2 minutes or until the bacon is crispy.
2.Remove the bacon and set aside.
3.Add the chicken to the Instant Pot and season with salt and pepper. Cook for 5 minutes until browned.
4.Add the grated carrot, celery, pearl onions, garlic, and mushrooms. Stir to combine.
5.Pour in the dry red wine, cognac, thyme, and parsley.
6.Turn off 'Sauté', and put the lid on the Instant Pot. Set the Instant Pot to 'Manual' for 15 minutes.
7.Release the pressure.
8.Turn the Instant Pot onto 'Sauté'.
9.In a small bowl, mix together cornstarch and cold water to form a slurry. Add to the Instant Pot and stir until the sauce thickens.
10.Salt and pepper to taste.
11.Serve hot over mashed potatoes or egg noodles.
