Ingredients

8 slices bacon , cut crosswise into thin strips
2 tablespoons olive oil
6 quarter chicken pieces ( legs and thighs )
1 1/2 teaspoons kosher salt , plus more for chicken
fresh ground black pepper
1 bag frozen pearl onions , thawed
8 garlic cloves , smashed
1 lb cremini mushroom , halved
3 russet potatoes , peeled and cut into chunks
3 carrots , peeled and cut into 2-inch pieces
1/3 cup all-purpose flour
4 sprigs fresh thyme
2 bay leaves
2 1/2 cups full-bodied red wine ( I used Pinot Noir )
2 cups low sodium chicken broth
1/2 cup fresh parsley leaves , roughly chopped
3 tablespoons red wine vinegar
Coq Au Vin is a classic French dish that has become a favorite around the world for its hearty, rich flavors and elegant presentation. The dish features tender chicken cooked in a flavorful red wine sauce with bacon, mushrooms, onions, and vegetables. Instructions

1.Preheat oven to 350°F (175°C).
2.In a large dutch oven, cook bacon over medium heat until crispy, about 10 minutes.
3.Using a slotted spoon, transfer bacon to a paper towel-lined plate.
4.Add 2 tablespoons of olive oil to the bacon fat.
5.Season chicken with kosher salt and pepper, then cook, skin side down until golden brown, about 5 minutes per side. Transfer to a plate.
6.Add pearl onions, garlic, cremini mushroom, potatoes, carrot and 1 1/2 teaspoons kosher salt to the dutch oven.
7.Cook, stirring occasionally until vegetables are tender, about 10 minutes.
8.Sprinkle with flour and cook, stirring for 2 minutes.
9.Add thyme, bay leaf, red wine, and chicken broth. Bring to a boil, scraping up browned bits from the bottom of the pot.
10.10.Add chicken and bacon back to pot, and place the lid on the dutch oven.
11.11.Transfer to preheated oven and bake for 1 hour 30 minutes.
12.12.Remove from oven and stir in parsley and red wine vinegar.
13.13.Season with salt and pepper, to taste, and serve.
