Ingredients

4 pounds dark meat chicken pieces
1 tablespoon vegetable oil
5 cloves crushed garlic
1/2 cup all-purpose flour
1 teaspoon poultry seasoning
3 links sweet Italian sausage , sliced
1 cup chopped onion
3 carrots , sliced
1/2 pound fresh mushrooms , sliced
1/2 teaspoon dried rosemary
1 cup red wine
1 can whole peeled tomatoes
salt and pepper to taste
Coq au Vin alla Italiana is an Italian take on the classic French dish, Coq au Vin, which translates to 'rooster in wine'. Instructions

1.Preheat your oven to 350°F.
2.Heat 1 tablespoon of vegetable oil in a large pot over medium heat. Add 4 pounds of dark chicken meat and sauté until browned. Remove the chicken and set it aside.
3.In the same pot, add 5 cloves of crushed garlic and 1/2 cup of flour. Cook until the flour turns golden brown.
4.Add 1 teaspoon of poultry seasoning, 3 sliced links of sweet Italian sausage, 1 cup of chopped onion, 3 sliced carrots, 1/2 pound of sliced fresh mushrooms, and 1/2 teaspoon of dried rosemary to the pot. Cook until the vegetables are soft.
5.Deglaze the pot with 1 cup of red wine. Add 1 can of whole peeled tomatoes and salt and pepper to taste. Simmer for 5 minutes.
6.Add back the chicken to the pot. Cover and bake in the oven for 1.5 to 2 hours, or until the chicken is cooked through.
