Ingredients

3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 bone-in skinless chicken breast halves
2 bone-in skinless chicken thighs
2 skinless chicken drumsticks
2 tablespoons butter
1 tablespoon oil
3 tablespoons dry gin
3/4 cup celery , chopped
3/4 cup carrot , peeled and chopped
1 cup onion , chopped
3 juniper berries , crushed
1 package mushrooms , sliced
3 sprigs fresh thyme
3 sprigs fresh flat-leaf parsley
1 bay leaf
1 cup dark beer or 1 cup ale
1/4 cup Greek yogurt
2 teaspoons white wine vinegar
1 tablespoon fresh flat-leaf parsley , rough chopped ( optional )
Coq à La Bière is a classic French dish that literally means 'chicken with beer'. This recipe is a delicious twist on the traditional French recipe by using dark beer and juniper berries. Instructions

1.In a small bowl, mix together flour, salt and black pepper. Coat the chicken pieces evenly with this mixture and set aside.
2.In a Dutch oven or large skillet, heat the butter and oil over medium-high heat and cook chicken pieces until golden brown on both sides. Transfer the chicken to a plate.
3.In the same pan, sauté chopped celery, chopped carrot, and chopped onion until softened. Add gin and stir in crushed juniper berries.
4.Add sliced mushrooms and cook for 3-4 minutes until they release their moisture and it has evaporated. Place the chicken pieces back into the pan.
5.Add thyme, parsley, bay leaf, and dark beer or ale to the pan and bring to a boil. Reduce heat and let it simmer. After 30 minutes, switch off the heat and remove the chicken pieces.
6.Add white wine vinegar and Greek yogurt to the gravy left in the pan, and mix well.
7.Either use an immersion blender to blend the mixture, or transfer it to a blender to process until smooth. Adjust seasonings if needed.
8.Serve the chicken pieces with the gravy.
