175 g butter ( You may need extra for greasing )
175 g caster sugar
3 eggs , beaten
1 pinch salt
175 g self-raising flour
1 tablespoon icing sugar
3 tablespoons raspberry jam
fresh cream

Instructions

1.Preheat your oven to 180°C and grease a 20cm cake tin with butter.
2.In a large bowl, beat the butter and caster sugar together using an electric mixer until light and fluffy.
3.Gradually add the beaten eggs, salt and self-raising flour to the mixture, continuing to mix until the batter is smooth and well-combined.
4.Transfer the batter to your greased cake tin and smooth out the top using a spatula.
5.Bake the cake for around 25 minutes or until it turns golden brown and a toothpick inserted in the center comes out clean.
6.Once baked, remove the cake from the oven, allow it to cool in the tin for a few minutes before turning it out onto a wire rack to cool completely.
7.Once the cake has cooled, spread raspberry jam over the top followed by fresh cream. Place the top half of the cake on the cream, dust with icing sugar, and serve!
