Ingredients

1 lb cornmeal , medium grind
1/2 - 3/4 lb okra , sliced
3 pints water
1/2 ounce salt
Cookoo from Barbados is a traditional dish consisting of cornmeal and okra. The sliminess of okra helps hold the cornmeal together to form a classic Bajan pudding. Cookoo is a popular dish and has different variations throughout the Caribbean.

Instructions

1.In a large pot, boil the water and salt together.
2.Add okra and let it cook for 10-15 minutes until slimy.
3.Slowly add cornmeal, stirring continuously.
4.Cover the pot and let it cook on low heat for about 15 - 20 minutes until the mixture is thick and softened.
5.Take it off the heat and let it cool slightly.
6.In order to serve, remove from the pan and cut into wedges.
