14 tomatillos , fresh , skins peeled off , rinsed well
1/2 large onions or 1 small onion , chopped
2 garlic cloves , minced
2 garlic cloves , whole
1 tablespoon olive oil ( she used lard )
1 tablespoon butter
water
4 tablespoons fresh cilantro , chopped ( optional )
1 jalapeno ( optional )

Instructions

1.In a large saucepan, heat up the olive oil and butter.

4.Bring to a boil, then reduce to a simmer and cook for 15 minutes until the tomatillos are soft.
5.Remove from heat and let cool.
6.Remove the whole garlic cloves.
7.In a blender, puree the mixture until smooth.
8.Return the mixture to the pan and add the chopped cilantro and jalapeno, if using.
9.Cook for an additional 5-10 minutes until slightly thickened.
10.Serve over eggs or as a dip with tortilla chips.
