1/2 cup red bell pepper , chopped

1 1/2 tablespoons fresh lime juice
8 flour tortillas
sour cream ( to garnish )

Instructions

1.Preheat oven to 375°F.

3.In a large mixing bowl, combine mashed black beans, refried beans, onions, garlic, corn, bell pepper, cilantro, and lime juice.
4.Add the cooked sweet potatoes to the mixing bowl and mash until well combined.
5.Divide the filling evenly among the 8 tortillas, rolling each burrito tightly and placing seam-side down in a baking dish.
6.Bake for 20 minutes or until tortillas are lightly browned and filling is hot.
7.Serve immediately with a dollop of sour cream and salsa, if desired.
