Instructions

1.In a medium-sized pot with a tight-fitting lid, bring the quinoa, water, and salt to a boil over high heat. Once boiling, reduce the heat to low, cover and simmer for 18-20 minutes, or until the water is absorbed.
2.While the quinoa cooks, in a small sauté pan heat the oil over medium-high heat. Once hot, add the onion and bell pepper to the pan and sauté for 3-5 minutes until the vegetables are tender.
3.When the quinoa is done cooking, remove it from the heat and let it sit for 5 minutes, then fluff with a fork. Add the sautéed vegetables to the pot and stir. Add the almonds or water chestnut and stir again.
