Bahamian conch fritters are a classic dish that is typically served as an appetizer in many Caribbean restaurants and households. Conch meat is mixed with a combination of finely chopped vegetables, spices, and a batter made out of flour, milk, and egg, then deep-fried until the fritters turn golden brown. The conch adds a distinct flavor to the fritters that is reminiscent of seafood, while the peppers and celery add a crunch and a mild spiciness that rounds off the overall flavor profile.

Instructions

1.Heat cooking oil in a deep pot over high heat.
2.In a mixing bowl, whisk together the flour, egg, milk, cayenne pepper, red pepper flakes, seasoning salt, salt (optional), and black pepper for at least one minute.
3.Add the remaining ingredients to the mixing bowl and mix the ingredients well.
4.Using a spoon, drop the batter into the hot oil so it forms small balls (no more than 5 per batch).
5.Fry for 3-5 minutes until golden brown, then remove from the heat and place on a paper towel to drain the excess oil.
6.Repeat the process until all batter has been used. Serve hot with dipping sauce of your choice.
