Ingredients

2 teaspoons minced shallots ( or 1 t minced garlic and 1 t minced onion as a substitute for shallot )
1/2 teaspoon fresh lemon juice , to taste
1/8 teaspoon salt
4 steaks , of your choice ( especially good on rib eye , sirloin , and even rich filet mignon )

Instructions

1.Preheat the oven to 425°F (220°C).
2.Place a large cast-iron pan on high heat and let it heat up for about 5 minutes.
3.Pat dry the steaks with paper towels and season both sides of the steak with salt and freshly ground black pepper.
4.Add the steaks to the hot cast-iron pan and sear for 2-3 minutes on each side for medium-rare (or until desired doneness)
5.In the meantime, prepare the Bearnaise butter by mixing together the softened butter, chopped tarragon leaves, shallots (or minced garlic and onion), lemon juice, and salt.
6.Once your steaks are done, transfer them to an oven-safe dish, place a tablespoon of the Bearnaise butter mixture on top of each steak, and bake in the oven for 3-4 minutes, or until the butter has melted and is sizzling on top of the steak.
7.Allow the steak to rest for a few minutes, then serve hot with the remaining Bearnaise butter on top.
