2 cups short-grain brown rice
1 sprig fresh thyme
4 cups low-sodium chicken broth , divided
6 cups water
1/4 cup drippings from a roast chicken

Instructions

9.Add the sliced leeks and cook until they are soft, about 5-6 minutes.
10.Add the short-grain brown rice and thyme sprig to the pot, and stir until the rice is coated in the butter.
11.Pour in the remaining 2 tablespoons of white wine and let it cook for 1-2 minutes.
12.Add 1 cup of chicken broth to the pot and stir until most of the liquid has been absorbed by the rice. Repeat this process, adding 1 cup of broth at a time, until the rice is cooked through and the risotto is creamy and thick.
13.Stir in the broth drippings from the roasted chicken and cook for an additional 1-2 minutes.
